Having a Hanuakkah Party?

We are getting ready for the Thanksgiving Holiday and wanted to share with you some of the things that go into the preparation of the holiday’s menu items.
For starters, we use Fresh Empire Turkeys and Turkey Breast, that we brine overnight to keep them delicious and juicy. The brine is a mixture of orange juice, lemon juice, kosher salt, bay leaves, brown sugar, and pickling spice. After the Turkeys are brined we dry them off, and put fresh cut vegetables in the cavity. Then they are rubbed with olive oil, and seasoned with our “Turkey Rub”, which is a mixture of kosher salt, garlic, paprika, onion, and poultry seasoning, and slow cooked to juicy perfection.
For our delicious Challah Stuffing, we take the juice from the cooked turkeys, add fresh sautéed vegetables, (mushrooms, celery, and onions), garlic, salt, black pepper, white pepper, poultry seasoning, sage, and parsley. We cook this until the vegetables are tender and then mix it with eggs, and fresh cut challah bread. Then it is baked in the oven till the stuffing is golden brown.
Another favorite is our Harvest Vegetable Soup. We start with fresh diced vegetables. These include, onions, celery, carrots, butternut squash, turnips, string beans, and parsnips. The diced vegetables are added to a large pot of boiling water with, crushed tomatoes, tomato paste, v-8 juice, fresh lemon juice, brown sugar, salt, black pepper, garlic, onion powder, sour salt, and fresh chopped parsley. The result is a delicious and hearty taste of fall.
