The days are shorter, the leaves have fallen, and we are starting to bundle up for winter which means – Chanukah is around the corner! This time of year is filled with rich traditions and time spent with family, which makes me think about some of the best memories from my childhood. I can still smell the latkes

We are getting ready for the Thanksgiving Holiday and wanted to share with you some of the things that go into the preparation of the holiday’s menu items.
For starters, we use Fresh Empire Turkeys and Turkey Breast, that we brine overnight to keep them delicious and juicy. The brine is a mixture of orange juice, lemon juice, kosher salt, bay leaves, brown sugar, and pickling spice. After the Turkeys are brined we dry them off, and put fresh cut vegetables in the cavity. Then they are rubbed with olive oil, and seasoned with our “Turkey Rub”, which is a mixture of kosher salt, garlic, paprika, onion, and poultry seasoning, and slow cooked to juicy perfection.
